This winter warmer soup is very easy and quick to do yet tastes delicious! We started by peeling and roughly cutting the onions, garlic, leeks and potatoes. Saute in a little oil and then we added the potatoes and vegetable stock. We then let simmer for about 25-30 minutes, blitz it and voila soup is ready!
Ingredients Makes about 2.5 litres
- 2 medium onions
- 4 cloves of garlic
- 1 bay leaf
- 4 small to medium Leeks (use white only)
- 4 medium potatoes
- 2 vegetables cubes
- 1 bouquet garni
- cold water
- seasoning
Equipment
- pot
- ladle
- hand blender
- peeler
- wooden spoon
- jug
- chopping board
Method
- Peel and roughly chop 2 medium onions
- Peel 4 cloves of garlic
- Turn pot on medium to high heat and add oil
- Wash and cut the leeks
- Add onion, garlic, bayleaf and cook for a minute or so
- Add leeks and cook for 2 to 3 minutes
- Peel, roughly cut and wash the potatoes than add them with the leeks, onions, garlic etc
- Add stock and bouqet garni, bring to the boil and then simmer for about 25-30 minutes
- Remove bouquet garni and bay leaf, check seasoning, blitz and serve.
What is bouquet garnish?..what can I use if I don’t have one?

hi Bernadette sorry for the late reply bouqet garni is a tea bag full of herbs you can use some thyme and rosemary plus the bayleaf thanks a lot
