MEDITERRANEAN TUNA
Ingredients serves 4
- 4 tuna steaks approximately 200g each
- 1 small onion
- 4 Cloves of garlic
- 2 peppers
- Thyme, bay leaf, rosemary
- 70g tomato puree
- 800g of chopped tomatoes
- 500g passata
- 50g olives black
- 50g of capers
- Bunch of basil
Method For the Mediterranean Tuna
- 1) slice the onion, garlic, and peppers then fry them for about 2 minutes adding the thyme
- bayleafs and the rosemary too
- 3) add the tomato puree and cook well for about 3 to 4 minutes
- 4) add the white wine and reduce by 3\4 then add the chopped tomatoes and the tomato
- juice (passata) bring to the boil then let simmer for about 1 and half hour
- 5) add the capers black olives and basil and bring back to the boil
- 6) turn off the heat dip in the tuna then cover and let rest for 5 minutes
- 7) serve with mush potatoes ENJOY!!!!!!!!
