Leek and Potato soup

This winter warmer soup is very easy and quick to do yet tastes delicious! We started by peeling and roughly cutting the onions, garlic, leeks and potatoes. Saute in a little oil and then we added the potatoes and vegetable stock. We then let simmer for about 25-30 minutes, blitz it and voila soup is ready!

Ingredients       Makes about 2.5 litres

  • 2 medium onions
  • 4 cloves of garlic
  • 1 bay leaf
  • 4 small to medium Leeks (use white only)
  • 4 medium potatoes
  • 2 vegetables cubes
  • 1 bouquet garni
  • cold water
  • seasoning

  • ladle
  • hand blender
  • peeler
  • wooden spoon
  • jug
  • chopping board


  1. Peel and roughly chop 2 medium onions
  2. Peel 4 cloves of garlic
  3. Turn pot on medium to high heat and add oil
  4. Wash and cut the leeks
  5. Add onion, garlic, bayleaf and cook for a minute or so
  6. Add leeks and cook for 2 to 3 minutes
  7. Peel,  roughly cut and wash the potatoes than add them with the leeks, onions, garlic etc
  8. Add stock and bouqet garni, bring to the boil and then simmer for about 25-30 minutes
  9. Remove bouquet garni and bay leaf, check seasoning, blitz and serve.
