Homemade Bread Sauce

The recipe discusses a delicious sauce made from a combination of butter, shallots, cloves, bay leaves, milk, brown bread, double cream, and nutmeg. In preparation, butter is melted in a saucepan, to which shallots, cloves, and bay leaves are added. After simmering milk for ten minutes, the solids are removed, and bread and cream are introduced to create a thick consistency. Finally, nutmeg is mixed in, and the sauce is cooked until the bread is fully dissolved, creating a flavorful accompaniment.

Ingredients

  • 25g butter
  • small shallot, quartered
  • 6 cloves
  • 2 bay leaves
  • 600ml milk
  • 100g brown bread, cut into squares
  • 150ml double cream
  • half a tsp nutmeg

Equipment

Method

  1. In a saucepan melt the butter, add shallots, cloves and bay leaves.
  2. Pour milk and partially cover the saucepan let it simmer for 10 mins on low heat.
  3. Remove the cloves, shallots and bay leaves.  Add the bread and cream and stir well.
  4. Add nutmeg and let it cook for 5 mins or until all bread is ‘melted’ and forms a nice thick sauce.
